Ingredients

Salmon:

  • 2 –4 salmon fillets
  • Jerk seasoning
  • Oil + butter

Grits:

  • 1 cup grits
  • 3 –4 cups liquid water + milk or broth
  • Butter + cream
  • Salt to taste

Instructions

  • Season salmon generously
  • Sear in cast iron (presentation side first)
  • Flip + baste with butter
  • Cook grits low and slow → creamy finish
  • Plate salmon over grits
