Chicken
- 4 lbs Bone-In Chicken Thighs or Leg Quarters
- 1 tsp Kosher Salt
- 1 batch Traditional Jerk Marinade link

Step 1: Marinate the Chicken

Preheat oven to 375°F or prepare grill for indirect cooking.
Cook chicken for approximately 40-45 minutes or until internal temperature reaches 175°F.
Allow chicken to rest for 5-10 minutes.
Step 3: Prepare Chef Winston's Tropical Mango-Pineapple Relish
