Floribbean Orange & Rum Glazed Salmon with Sweet Plantain Mash

Ingredients

For the Salmon:

  • 4 salmon fillets 6 oz each
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder

For the Orange & Rum Glaze:

  • ½ cup fresh Florida orange juice
  • ¼ cup dark rum
  • 2 tbsp honey
  • 2 tbsp unsalted butter
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • ½ tsp allspice
  • ½ tsp fresh thyme leaves
  • Zest of 1 orange

For the Sweet Plantain Mash:

  • 2 large ripe plantains yellow with black spots
  • 2 tbsp unsalted butter
  • ¼ cup coconut milk or heavy cream
  • ½ tsp cinnamon
  • ½ tsp salt
  • ½ tsp nutmeg
  • 1 tsp honey optional, for extra sweetness

Instructions

Prepare the Plantain Mash:

  • Peel and slice the ripe plantains into chunks.
  • Bring a pot of water to a boil and cook plantains for 10–12 minutes until fork-tender.
  • Drain and mash plantains in a bowl.
  • Stir in butter, coconut milk, cinnamon, nutmeg, salt, and honey until smooth and creamy. Cover and keep warm.

Cook the Salmon:

  • Pat salmon fillets dry and season with salt, pepper, smoked paprika, and garlic powder.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear the salmon, skin-side down first, for 3–4 minutes per side until golden brown. Remove from skillet and set aside.

Make the Orange & Rum Glaze:

  • In the same skillet, add orange juice, rum, honey, soy sauce, Dijon mustard, allspice, thyme, and orange zest.
  • Simmer over medium heat for 3–5 minutes until slightly thickened. Stir in butter and remove from heat.

Glaze & Serve:

  • Return salmon to the skillet, spooning the orange rum glaze over the fillets. Let them sit for 1 minute to absorb the flavors.
  • Serve the glazed salmon over the sweet plantain mash, drizzling extra glaze on top.
