Floribbean Sweet Potato & Plantain Hash

Ingredients

  • 2 cups diced sweet potatoes small dice
  • 1 ripe plantain sliced
  • ½ cup diced bell peppers
  • ½ cup diced red onion
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Pinch allspice
  • Fresh thyme + scallions
  • 2 tbsp butter or oil

Instructions

  • Roast sweet potatoes at 400°F for 15–20 mins (or par-cook)
  • Sauté plantains until lightly caramelized → remove
  • In same pan, sauté onions + peppers
  • Add garlic + spices
  • Fold in sweet potatoes + plantains
  • Finish with butter, thyme, scallions
