Fresh thyme + scallions

Instructions
Roast sweet potatoes at 400°F for 15–20 mins (or par-cook)
Sauté plantains until lightly caramelized → remove
In same pan, sauté onions + peppers
Add garlic + spices
Fold in sweet potatoes + plantains
Finish with butter, thyme, scallions
