  • 1.5 lbs 5 cups all-purpose flour
  • 1.5 tablespoons baking powder
  • 1/3 cup sugar
  • 3 teaspoons salt
  • 2.5 tablespoons cold shortening
  • 1 ¼ cups evaporated milk
  • Water as needed to form dough

DIRECTIONS 
  1. Mix Dry Ingredients
    In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Mix well to evenly distribute the ingredients.
  2. Incorporate Shortening
    Add the cold shortening to the dry ingredients. Using your fingertips or a pastry cutter, work the shortening into the flour mixture until it resembles coarse crumbs.
  3. Add Liquid
    Gradually pour in the evaporated milk while mixing with a spoon or your hands. Add water, a little at a time, until the dough comes together into a smooth, slightly sticky ball.
  4. Knead Dough
    Transfer the dough to a floured surface and knead for about 5 minutes until it becomes smooth and elastic.
  5. Rest the Dough
    Cover the dough with a clean kitchen towel and let it rest for 15-20 minutes to relax the gluten.
  6. Shape the Johnnycakes
    Divide the dough into 6-8 equal pieces. Roll each piece into a ball, then flatten it into a round disc about ½ inch thick.
  7. Cook the Johnnycakes
    Heat oil in a large, heavy-bottomed skillet over medium heat (about 350°F if frying). Fry each Johnnycake for 3-4 minutes on each side until golden brown and cooked through. For a healthier version, you can bake them in a 375°F oven for 12-15 minutes, flipping halfway through.
  8. Drain and Serve
    If fried, remove the Johnnycakes from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite topping or side dish.
