Ingredients:

  • 2 cups diced sweet potatoes (small dice)
  • 1 ripe plantain (sliced)
  • ½ cup diced bell peppers
  • ½ cup diced red onion
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • Pinch allspice
  • Fresh thyme + scallions
  • 2 tbsp butter or oil

Steps:

  1. Roast sweet potatoes at 400°F for 15–20 mins (or par-cook)
  2. Sauté plantains until lightly caramelized remove
  3. In same pan, sauté onions + peppers
  4. Add garlic + spices
  5. Fold in sweet potatoes + plantains
  6. Finish with butter, thyme, scallions
