Ingredients:
- 2 cups diced sweet potatoes (small dice)
- 1 ripe plantain (sliced)
- ½ cup diced bell peppers
- ½ cup diced red onion
- 2 cloves garlic (minced)

- Pinch allspice
- Fresh thyme + scallions
- 2 tbsp butter or oil
Steps:
- Roast sweet potatoes at 400°F for 15–20 mins (or par-cook)
- Sauté plantains until lightly caramelized → remove
- In same pan, sauté onions + peppers
- Add garlic + spices
- Fold in sweet potatoes + plantains
- Finish with butter, thyme, scallions
