Salmon:

Grits:

  • 1 cup grits
  • 3–4 cups liquid (water + milk or broth)
  • Butter + cream
  • Salt to taste

Steps:

  1. Season salmon generously
  2. Sear in cast iron (presentation side first)
  3. Flip + baste with butter
  4. Cook grits low and slow creamy finish
  5. Plate salmon over grits
