Ingredients:
Salmon:
- 2–4 salmon fillets
- Jerk seasoning
- Oil + butter
Grits:
- 1 cup grits
- 3–4 cups liquid (water + milk or broth)
- Butter + cream
- Salt to taste
Steps:
- Season salmon generously
- Sear in cast iron (presentation side first)
- Flip + baste with butter
- Cook grits low and slow → creamy finish
- Plate salmon over grits
