Floribbean BBQ Chicken Mac & Cheese Bake
BBQ chicken mac and cheese is the kind of comfort food I love because it takes familiar ingredients and gives them a completely different personality. In this case, creamy homemade macaroni and cheese gets topped with smoky BBQ rotisserie chicken, melted cheese, crispy fried onions, and fresh scallions.
But this dish is about more than comfort food.
It was Wednesday — Day 3 of my Budget Gourmet Challenge, where I set out to turn one $4.99 rotisserie chicken into four completely different family meals over four days.
The goal wasn’t simply to eat the same chicken in different forms. I wanted each meal to feel like something completely new.
From One Chicken to BBQ Chicken Mac and Cheese
On Monday, I started with a fresh, colorful pasta dinner: Chicken Primavera, loaded with vegetables, garlic, herbs, lime, and Parmesan.
Tuesday took the chicken in a completely different direction with Loaded Chicken Quesadillas with Rice & Black Beans. Crispy tortillas, seasoned chicken, peppers, onions, melted cheese, rice, and black beans made that meal feel nothing like Monday’s dinner.
By Wednesday, I wanted something rich, smoky, and comforting.
That’s where this BBQ chicken mac and cheese came in.
I took shredded rotisserie chicken and tossed it with BBQ sauce before layering it over creamy macaroni and cheese. The result is exactly what I want from comfort food: creamy pasta underneath, smoky and saucy chicken on top, and plenty of melted cheese bringing everything together.
Then I finish the whole thing with crispy fried onions and fresh scallions.
That’s a serious plate of food.
Why This BBQ Chicken Mac and Cheese Works
For me, the magic is in the contrast.
The macaroni and cheese is creamy and rich, while the BBQ chicken brings smoky, tangy sweetness. The crispy onions add texture, and the scallions bring a fresh bite at the end.
I also use both sharp cheddar and mozzarella. The sharp cheddar gives the cheese sauce plenty of flavor, while the mozzarella helps give the finished bake that beautiful melted, stretchy quality.
And because I’m starting with rotisserie chicken, the hardest part of the protein is already done.
That’s one of the biggest lessons behind this challenge: you don’t always have to start from scratch to make a great meal. Sometimes the smartest cooking is knowing how to take something that’s already prepared and turn it into something completely different.
My Chef’s Tip for the Best Bake
Don’t rush the cheese sauce.
Start by making your butter and flour mixture, then gradually add the milk while stirring until the sauce becomes smooth and creamy. Once you add the cheese, keep the heat controlled so it melts into the sauce rather than becoming greasy or clumpy.
And don’t drown the macaroni in sauce before it goes into the oven. You want enough creamy cheese sauce to coat the pasta generously, but you also want that BBQ chicken and additional cheese to have room to become part of the finished dish.
The oven does the rest.
Once the top is bubbling and everything is hot, that’s when I bring in the crispy onions and scallions. They shouldn’t disappear into the bake. I want that crunch and freshness right at the end.
The Third Meal of the Budget Gourmet Challenge
This dish represents Day 3 — Wednesday of my four-day challenge.
One $4.99 rotisserie chicken has now become three very different dinners.
Monday was the vegetable-packed Chicken Primavera.
Tuesday was the crispy chicken quesadilla dinner.
Wednesday became this smoky, creamy BBQ chicken mac and cheese bake.
And there was still one more transformation waiting for Thursday.

That’s the transformation I’m looking for.
When I’m planning meals around a budget, I think about how I can create variety before I think about buying more ingredients. A little planning can completely change how you use what you already have.

So yes, I’m stretching that $4.99 chicken — but I’m doing it thoughtfully.

Ingredients
- 2 cups shredded rotisserie chicken
- 12 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk
- 2 cups sharp cheddar cheese
- ½ cup mozzarella
- ½ cup BBQ sauce
- ½ cup crispy fried onions
- 2 scallions
- Smoked paprika
- Salt & pepper
Instructions
- Cook macaroni.
- Prepare cheese sauce.
- Mix pasta with cheese sauce.
- Toss chicken with BBQ sauce.
- Layer mac and cheese in baking dish.
- Top with BBQ chicken.
- Add additional cheese.
- Bake until bubbly.
- Finish with crispy onions and scallions.
