Chicken Primavera: A Colorful Rotisserie Chicken Pasta

Food prices keep going up, and every trip to the grocery store seems to cost more than the last. So I wanted to see just how far I could really stretch one $4.99 rotisserie chicken.

Four days. Four completely different meals.

For Monday, I wanted something fresh, colorful, and full of flavor. That’s how I landed on this chicken primavera.

I took some of that rotisserie chicken, paired it with penne pasta and a skillet full of colorful vegetables, and turned it into a dinner that feels completely removed from the chicken I started with. Garlic, herbs, Floribbean seasoning, lime, Parmesan, and fresh vegetables bring everything together.

This is what I mean when I talk about budget gourmet. You don’t always need more ingredients. Sometimes you just need to see the ingredients you already have differently.

Turning One Rotisserie Chicken Into Something New

When I picked up that rotisserie chicken, I wasn’t thinking about eating it the same way for the next four days.

I was thinking about possibilities.

For Monday, I wanted a pasta dish that would feel fresh and satisfying. I shredded the chicken and brought it together with penne, onion, garlic, red and yellow bell peppers, zucchini, broccoli, and cherry tomatoes.

The vegetables do a lot of the work here. They give the pasta color, texture, and freshness, while the chicken adds the heartiness I want from a family dinner.

I season everything with Italian seasoning and my Floribbean Seasoning, then finish the dish with fresh lime juice, Parmesan, and parsley.

That combination gives me exactly what I want: savory, bright, fresh, and just a little bit of Floribbean personality.

The Key to Good Chicken Primavera

For me, the vegetables are just as important as the chicken.

I don’t want them cooked until they’re soft and disappearing into the pasta. I want that red pepper to still have some bite. I want the zucchini to hold its shape. I want the broccoli to stay vibrant.

That’s why I cook everything in stages.

I start with olive oil, onion, and garlic, letting the garlic become fragrant without burning it. Then I add the peppers, broccoli, and zucchini and let them cook until they’re tender-crisp.

I’m not trying to rush this part.

Once the vegetables are where I want them, I add the tomatoes and seasonings, then fold in the shredded chicken. The cooked pasta goes in next, and everything gets tossed together so the chicken and vegetables are distributed throughout.

Finally, I bring in the lime juice, Parmesan, and parsley.

That final hit of lime is one of my favorite parts. It wakes everything up and keeps the pasta from feeling too heavy.

And if you like a little heat the way I do, a small amount of crushed red pepper flakes will do the job.

Make This Pasta Work With What You Have

One of the reasons I like this recipe for the Budget Gourmet Challenge is that it doesn’t require me to make cooking harder than it needs to be.

I’ve got vegetables in the refrigerator? Use them.

I’ve got chicken that needs a new life? Perfect.

I’ve got pasta in the pantry? Even better.

That’s the kind of cooking I want people to feel comfortable doing at home. Recipes give you a starting point, but you should also be able to look at what’s available and make it work.

A Little Floribbean Flavor

I’m calling this Floribbean Chicken Primavera because I wanted the familiar Italian-American idea of primavera to carry some of my own flavor.

Floribbean cooking is all about bringing together the ingredients, flavors, and influences that make sense for the dish. Here, I’ve got the pasta and Parmesan alongside lime, colorful vegetables, garlic, and my Floribbean Seasoning.

The result isn’t complicated.

It’s just flavorful.

And that’s what I want when I’m cooking a weeknight meal. I want something that looks beautiful when it hits the table and tastes like I put some real thought into it.

The First Meal From My $4.99 Chicken

This was Monday’s dinner, and it proved exactly what I wanted to prove with this challenge.

One rotisserie chicken can become something completely different when you stop thinking about it as leftovers and start thinking about what it can become next.

The chicken primavera was only the beginning.

On Tuesday, I took the same chicken in a completely different direction with Chicken Quesadillas.

Then came Wednesday’s BBQ Chicken & Mac & Cheese, turning the chicken into the kind of comfort food that makes you forget where it started.

And I saved the bones for Thursday, when I made Caribbean Chicken Soup, because I wasn’t finished getting value from that chicken yet.

That’s the part of this challenge I love most.

Every day, I had to look at what was left and ask myself what I could turn it into next.

Serve It Up

This chicken primavera makes four servings and takes about 35 minutes from start to finish, making it a practical option for a weeknight dinner.

I like serving it with garlic bread, especially when I’m feeding the family and want something alongside the pasta to round out the meal.

And if you’re working with rotisserie chicken as part of your own meal planning, remember to handle those leftovers properly. The USDA recommends using refrigerated cooked chicken, including rotisserie chicken, within 3 to 4 days.

For me, though, the biggest takeaway from this meal is much simpler.

I didn’t need an expensive grocery haul to make a beautiful dinner.

I started with one $4.99 chicken.

I added what I already had.

And I turned it into something my family could sit down and enjoy.

That’s good cooking to me.

Floribbean Chicken Primavera

Ingredients

  • 2 cups shredded rotisserie chicken
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 small onion sliced
  • 1 red bell pepper julienned
  • 1 yellow bell pepper julienned
  • 1 zucchini sliced
  • 1½ cups broccoli florets
  • 1 cup cherry tomatoes halved
  • ½ tsp crushed red pepper flakes optional
  • ½ tsp Italian seasoning
  • ½ tsp Chef Winston Floribbean Seasoning
  • Juice of 1 lime
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped parsley
  • Salt & pepper to taste

Instructions

  • Cook pasta until al dente.
  • Heat olive oil in a large skillet.
  • Sauté onion and garlic until fragrant.
  • Add peppers, broccoli, zucchini and cook until tender-crisp.
  • Stir in tomatoes and seasonings.
  • Fold in shredded chicken.
  • Add cooked pasta and toss together.
  • Finish with lime juice, Parmesan and parsley.
  • Serve with garlic bread.
