Loaded Chicken Quesadillas with Rice & Black Beans
When I set out to see how far I could stretch one $4.99 rotisserie chicken, I gave myself one simple rule: that one chicken had to become four completely different family meals over four days. No wasting good meat, no making the same dinner four nights in a row, and no sacrificing flavor just because I was working with a budget.
By Tuesday, I was ready to take that chicken in a completely different direction.
After turning it into a colorful pasta dinner on Monday with my Chicken Primavera, I wanted something crispy, cheesy, and fun for the second meal of the challenge. That is where these Loaded Chicken Quesadillas with Rice & Black Beans came in.
Turning Leftover Chicken Into a Completely New Meal
One of my favorite things about quesadillas is how easily they can turn simple ingredients into something that feels like a full meal.
I started with shredded rotisserie chicken and built the flavor from there with sautéed red and green bell peppers, onions, taco seasoning, and plenty of Mexican cheese. Once everything was tucked inside a flour tortilla and cooked until golden and crisp, the chicken barely resembled what I started with two days earlier.
And that was the whole point of this challenge.
I’m not interested in simply reheating leftovers and calling them dinner. I want to show how you can take one ingredient and give it an entirely different identity with a few smart additions and a little creativity.
The chicken was already cooked, so I didn’t need to spend time preparing another protein. Instead, I focused on building flavor and texture around it.
The peppers and onions bring sweetness and a little bite, while the taco seasoning gives the chicken that savory, slightly smoky flavor that works so well with melted cheese. Once everything hits the skillet, the tortilla gets crisp on the outside while the cheese melts around the filling.
That combination is hard to resist.
Make It a Complete Family Dinner
I also didn’t want these quesadillas sitting on a plate by themselves. Since this was part of a challenge about stretching one grocery purchase into complete family meals, I served them with seasoned Spanish rice, black beans, salsa, guacamole, and sour cream.
That combination turns a few quesadillas into a dinner that feels substantial without requiring a long list of expensive ingredients.
And you can make this meal your own. If you have extra vegetables in the refrigerator, this is a great place to use them. You can adjust the amount of chicken, add more peppers, change the cheese, or make the quesadillas smaller for kids.
That’s one of the lessons I wanted this challenge to demonstrate: budget cooking doesn’t have to mean boring cooking.
The Second Meal in My Four-Day Chicken Challenge
This was Day 2 — Tuesday of my Budget Gourmet Challenge.
One $4.99 rotisserie chicken was becoming four meals, and each day had to feel different.
Monday was the fresh, vegetable-packed Chicken Primavera.
Tuesday became these crispy chicken quesadillas with rice and black beans.
But I still wasn’t finished with that chicken.
On Wednesday, I took the remaining meat in an entirely different direction with [BBQ Chicken & Mac & Cheese — INSERT VERIFIED LINK WHEN PUBLISHED], pairing smoky barbecue chicken with creamy, comforting macaroni and cheese.

That’s what made this challenge so much more interesting to me than simply finding four ways to eat rotisserie chicken. Each meal had its own personality.
Why I Love This Kind of Cooking
There is something satisfying about opening the refrigerator and looking at what you already have before deciding what to cook.
That mindset can make a big difference when grocery prices are climbing. You start thinking less about buying completely new ingredients for every meal and more about how you can transform what is already in your kitchen.
For me, that’s where the fun comes in.
The same chicken that became pasta on Monday became crispy quesadillas on Tuesday, smoky BBQ chicken on Wednesday, and the foundation for a hearty Caribbean soup on Thursday.
Four meals. One chicken. Very little waste.
And these quesadillas might be my favorite example of how dramatically you can change an ingredient with just a few simple additions.
So if you have some leftover rotisserie chicken sitting in your refrigerator, don’t automatically think, “leftovers.”

Loaded Chicken Quesadillas with Rice & Black Beans
Ingredients
- 2 cups shredded rotisserie chicken
- 8 large flour tortillas
- 3 cups shredded Mexican cheese blend
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 tbsp olive oil
- 1 tsp taco seasoning
- Salt & pepper
Sides
- Spanish rice
- Black beans
- Salsa
- Guacamole
- Sour cream optional
Instructions
- Sauté peppers and onions.
- Season with taco seasoning.
- Add shredded chicken.
- Fill tortillas with cheese and chicken mixture.
- Grill until golden and crispy.
- Slice into wedges.
- Serve with rice, beans, salsa and guacamole.
